Beloved Georgetown Fine-Dining Destination Reopens After Devastating Fire

Washington D.C. – Reverie, the Michelin-starred fine-dining restaurant in Georgetown, is back after a devastating fire in 2022. Chef Johnny Spero has rebuilt the restaurant with a new look, a focus on sustainable ingredients, and a unique $255 tasting menu experience.

Rising From the Ashes

In August 2022, a fire ripped through Reverie, destroying the restaurant and Spero's personal collection. Determined to revive his culinary vision, Spero took Reverie on the road, hosting pop-up experiences across the country and internationally.

A New Era for Reverie

The new Reverie boasts a moodier aesthetic with black granite countertops and white tablecloths. The 36-seat space offers a more intimate dining experience. Notably, the 20-foot counter has been removed to provide the kitchen with additional space.

A Modernist Culinary Journey

The focus remains on East Coast seafood and vegetables, but with a modernist twist. The 12-to-16 course tasting menu features innovative dishes like potato-onion doughnuts filled with glazed eel and Maine lobster prepared with Korean-inspired "rice honey."

Vegetarian Delights

A dedicated vegetarian menu showcases creative plant-based options like celery root cooked in chamomile and jasmine, served with a light vegetable broth.

Desserts are equally inventive, featuring a strawberry milk sorbet made with a Korean gochujang and "frosted" geranium for a surprising flavor profile.

Sustainable Indulgence

Beverage pairings prioritize sustainable and low-intervention wines and spirits, alongside non-alcoholic options, reflecting Spero's personal shift away from alcohol.

Rebirth Through Fire

The new design incorporates shou sugi ban wood, a Japanese technique of charring wood for increased durability. "It's rebirth and preservation through fire," says Spero, a fitting metaphor for Reverie's journey.
